Wild Rice and Roasted Veggie Bowl

Ingredients: Roasted Veggies-a handful of mixed colored grape tomatoes, 1 can of chickpeas, 1/2 of a zucchini, 1/2 of an onion, avocado oil, garlic powder, chile powder, cumin, coriander, onion powder, smoked paprika; Other Ingredients- Wild rice or brown rice, spinach, Trader Joe's green goddess dressing.

Directions: On a large sheet pan lined with parchment paper add veggies, drizzle with avocado oil, add seasoning and mix up until all the veggies have been evaly coated in the oil and seasonings. Roast in the oven for 30 minutes at 450 degrees. While you roast youe veggies, cook your rice, since I used wild rice I also have to soak it overnight in water. In a bowl assemble rice, roasted veggies, spinach or greens of your choice, and top with a dressing.
