Step 1 — Preparing the Chicken

Place 150g of raw boneless skinless chicken breast onto a cutting board.

Tenderize your chicken with a mallet. This will make it easier to work with and improve texture.

Carefully cut off any large fat deposits or pieces of skin left on the breast.

Once done you can either score or dice your chicken. Scoring can lead to overall juicier pieces, but dicing is also a great method and may be recommended to better fit the chicken into a pan or air fryer.

Season the chicken to your liking with: Salt, Garlic/Onion Powder, Cajun Seasoning, Tajin.

Step 2 — Cooking the Chicken

Tip: This recipe uses an air fryer, but chicken can also be prepared in a pan. If using a pan, stick to cooking sprays to avoid unwanted calories from oil. If you do prefer oil, make sure to measure it out!

Preheat air fryer to 375°F.

Once heated, place chicken into the air fryer.

Cook for 7 minutes at 375°F, then flip.

Continue cooking for another 7 minutes at 375°F.

Check the internal temperature — the thickest part should read 165°F. If it reads less, continue cooking 1-2 minutes at a time until it reaches the safe temperature.

Important: Always ensure chicken reaches an internal temperature of 165°F before consuming.

Once cooked, let the chicken rest on a wire rack or paper towels for 5-10 minutes.

Step 3 — Assembling the Tacos

Place your pita bread flat and spread the chicken down the middle. If you would like to soften your pita bread, leave it on a low temperature pan for a minute.

Calorie Saving Tip! If you plan to make more than one taco, instead of using 2 full pita bread pieces, cut them in half. Since they are quite airy they can be propped open to make a pocket-like shell for your taco fillings.

Sprinkle your fat free cheese on top. If you would like to melt the cheese, throw the taco into a microwave or air fryer for a minute before adding cold ingredients.
